History
The Solar de São Domingos Cellars has been producing sparkling wines, old brandies, pomace spirits and Bairrada, Dão and Beiras wines, since 1937. Its cellars are home to more than two million bottles of sparkling wine, many thousands of wine bottles and hundreds of French oak barrels for the famous wine pomace spirits. The São Domingos Pomace Aguardente Bagaceira , distilled in the company´s own pot stills, continues to lead the market with the same quality it has enjoyed for decades. In 2006 we inaugurated a modern wine-making centre that allows us to receive tons of grapes from our properties and viticulturists working in close partnership with the company. Under the aegis of the São Domingos name, other brands are emerging, such as Lopo de Freitas, Elpídio, Quinta de S. Lourenço and more recently Volúpia, a white wine that has been surprising consumers as well as opinion makers. Constant innovation in production and vinification methods have allowed us to raise the quality and prestige of the wines of the company thus reinforcing the business competitiveness of the São Domingos brand nationally and internationally, throughout its 75 years of existence. Wine tourism is another area of particular interest and every year thousands of visitors are amazed by the beauty of the galleries excavated in the rock, the millions of bottles, and the showroom and a museum with a tasting room. We are enthusiastic partners of the Rota da Bairrada project.
The Solar de São Domingos Cellars is celebrating its 75th birthday in 2012, and has been distinguished with the award for Best Producer of Sparkling Wines Award W-2011, by Anibal Coutinho
Distinctive Aspects
Caves São Domingos vineyards are carefully nurtured throughout the growth cycle, from the pruning to harvest, which insures a very high level of sanitary and oenological qualities. After the harvest, the grapes are left in a cold room for 24 hours, and after being selected, are gently and slowly pressed. After decantation, there is an inoculation with selected yeasts, bringing about fermentation in stainless steel tanks and producing the base wine for the sparkling wine, with all its singular characteristics of bouquets and flavours.
