We are a small family property (the two of us and 5 employees) in Bairrada.
We work biodynamically and are certified by Ecocert. We only work with native grape varieties: Baga (emblematic grape variety) for red wine and Bical, Cercial, Maria Gomes and Arinto for white wine.
Our production is 80.000 bottles/year. The vineyard area is 17ha, divided into 15 different plots, in 4 villages. We have many old Baga vines on limestone clay. Most of the Baga vines are hand worked.
Filipa is an active member of the committee of biodynamic producers in Portugal (Associação biodinâmica - ABIOP).

Filipa Pato and William Wouters are a magical collaboration between husband and wife.
Our philosophy is simple: create authentic wines without make-up. So they express the true nature of the vine from which they come from. We focus solely on indigenous grape varieties. Baga, Bical, Arinto, Cercial and Maria Gomes create wines with soul that together with our terroir, form the ideal conditions for the practice of biodynamic viticulture.
In the winery, we gently manipulate the grapes, minimal intervention and strict monitoring of the wine allow our grapes to fully express themselves. We create wines of "terroir" by uniting knowledge, art and nature to produce "no make-up", each wine with its own character.
Filipa Pato, wine producer in Bairrada and Chemical Engineer from the University of Coimbra, refined her winemaking skills by making vintages in Bordeaux, France; Mendoza, Argentina; Margaret River, Australia; and with her father, Luís Pato, the "Baga Rebel".
William Wouters, chef/sommelier/restaurateur, comes from a restaurant-related family in Antwerp, Belgium. He is a sommelier champion, restaurateur and former chef in the Belgian football team for the World Cup in Brazil and the European Cup in France.
Together Filipa and William share all their experiences: the love for food and wine; meetings with great wine producers, sommeliers and wine lovers from all over the world and the magical and inexhaustible culture of the wine world. Today, for Filipa and William, Óis do Bairro is the centre of their wine universe. They will be happy to share all their passion for food and wine with you. Drink local, eat local and think global.
