Cave Central da Bairrada, S.A. is located in Anadia, the capital of Bairrada.

This company was founded in 1924 by José Ferreira Tavares, whose company name was 'José Ferreira Tavares Lda.' and whose business name was 'Cave Central da Bairrada'. Its main activity was the production of sparkling sparkling wines.

History

After having passed through several owners, it was acquired in 1977 by Américo Matos and his family, who are still the current owners.

The main activity of sparkling and carbonated wines production was joined by the production of table wines, liqueurs, spirits, brandies and non-alcoholic beverages and the commercialization of wines from demarcated regions, namely Bairrada, Dão and Vinho Verde.

However, it is worth mentioning the launching of the sparkling wine 'Castiço' in 1978, which is still commercialised nowadays and consists of a wine specially created to accompany grilled food and the Bairrada Roast Suckling Piglet.

In 1994, due to the immobilization of the internal market, Cave Central da Bairrada started exporting and currently exports to Brazil, United States of America, Venezuela, Switzerland, Cape Verde, Angola, Mozambique and Guinea-Bissau and makes intra-community transmission of goods to France, United Kingdom, Belgium, Germany.

In 2002, in order to improve the quality and follow the consumer market trends, Cave Central da Bairrada made a profound change in the production process. With the new process, it stopped adding carbon dioxide to the wines, which now acquire their own gas through natural fermentation in closed vats - Charmat Method - and also started producing sparkling wines.

During 2005, Cave Central da Bairrada applied the same production process to the Sparkling Sparkling Wine 'Castiço' which was then called 'Castiço' because the gas was acquired by fermentation in closed vats.

At the moment, the organisation's product portfolio is centred on the production of sparkling wines, semi-sparkling wines, liqueurs, syrups (currants) and brandies. In the range of sparkling wines the highlight goes to the M&M Gold Edition sparkling wines and to the M&M Silver Edition.

Currently, the most commercialized wine in the company is the Castiço wine, being quite popular, for having been an innovation in the category of sparkling wines.
